Caring for your wellbeing doesn’t have to be practised alone. In fact, sharing a nourishing meal with those that light you up can be a meaningful (and delicious) way to cultivate a sense of community and social wellbeing, which offers a range of important health benefits. This Beef Pho recipe from Jodie Blight takes around 40 minutes, but feel free to spend hours deep in conversation while you enjoy it.

ingredients:
- 400g beef fillet
- 1 brown onion, thickly sliced
- 2cm ginger, thick slices
- 3 star anise
- 1 cinnamon stick
- 1/2 tbsp cardamom seeds
- 1 tbsp coriander seeds
- 1/2 tbsp black peppercorns
- 4 cloves
- 2 garlic cloves, peeled and bruised
- 2 ltrs beef stock
- 2 tbsp fish sauce
- 1/2 tbsp caster sugar
- 200 g rice noodles
toppings:
- 100g bean sprouts
- 1 bunch mint
- 1 bunch coriander
- 1 long red chilli, diced (optional)
- 1 lime, cut into wedges
method:
- Place the beef fillet in the freezer for 20 minutes. This will make it easier to slice thinly without freezing the beef solid.
In a large saucepan over medium-high heat, dry roast the onion and ginger until they char slightly. Add the star anise, cinnamon stick, cardamom seeds, coriander seeds, black peppercorns, and cloves. - When fragrant, add the bruised garlic cloves and toss around for another 30 seconds. Then add the beef stock, fish sauce, and sugar. Bring to a boil, reduce the heat, and simmer for 15 - 20 minutes while you prepare the noodles and toppings.
- Remove the beef from the freezer and slice it as thinly as possible.
- Divide the noodles among 4 bowls and top with the thinly sliced beef.
- Remove the aromatics and solids from the broth using a skimming or straining spoon (or a sieve but be sure to catch the broth). Bring the broth back to a boil over high heat for a few minutes to ensure it is very hot.
- Ladle the boiling hot broth over the noodles and beef. The hot broth will gently cook the beef.
- Serve immediately, garnished with bean sprouts, mint, coriander, chilli (if using), and lime wedges.
